1) Tochi-mochi: Japanese Sweets
Tochimochi is a local speciality that is mixed with horse chestnuts. It takes time and effort to remove the scum from the horse chestnuts and it gives them an addictive bittersweet taste as a result. There are two types of Tochimochi, one with red bean paste inside and the other is coated with crushed red bean paste on the outside.

2) Kata-Tofu: Firm Tofu
This firm tofu is made in the same traditional methods as in the past, taking time and care. The hand-made tofu brings out the natural sweetness of the soy beans. Cut into slices for sashimi or miso dengaku, or tofu steaks are also recommended.

3) Kaga-Hakusan Niwakasoba: Buckwheat Noodles
Buckwheat flour produced in Torigoe and other parts of Japan is stone grounded and milled, then dried before the buckwheat loses its freshness. Produced by a handmade soba experience facility, the ultimate taste can be enjoyed at home.

4) Hakusan Kata-Tofu Curry: Curry with Firm Tofu
Curry with firm tofu, a specialty of Hakusanroku. The white curry, which uses plenty of healthy local ingredients such as firm tofu, silken tofu, soya milk, rice flour and sake lees, is rich in spiciness and flavour.

5) Hakusan Megumino-mame Atsuage: Deep Fried Tofu
Carefully made firm tofu is deep-fried in canola oil. The surface is fragrant and the filling is juicy as you bite into it. Recommended to be eaten grilled and crispy.

6) Okayu-san: Rice Porridge
Rice porridge served for breakfast at Nishiyama Ryokan is available in packages to enjoy at home. The porridge is made from white rice and brown rice, with nothing else added. Cooked only with hot water from the Nakamiya hot spring and just a hint of salt, which enhances the sweetness of the rice.

7) Kuzumawashi-yaki: Baked Sweets
Kuzumawashi is a traditional mountain pastry made with sweetened chestnuts, walnuts and sweet potatoes, which are made sticky with rice flour. This is a simple baked pastry with a nostalgic flavour. Enjoy its sweet aroma.

8) Hakusan Kata-tofu Shokora: Firm Tofu Coockies
Made from firm tofu soymilk, this is a speciality product that condenses the flavour of soy beans. The soft cookies in the shape of Hakusan or Mount Haku are so soft that they crumble in the mouth and the aroma of soymilk spreads softly.

9) Kotokoto Nameko-chan: Flavoured Nameko Mushrooms
Sweet and spicy stew of boiled nameko mushrooms from the mountains around Hakusan or Mount Haku and buckwheat seeds which add a crunchy texture. All the ingredients are safe and locally produced, and the stylish labels are attractive to display in the kitchen.

10) Katchiri: Soy sauce flavoured Simmered Potatoes
A taste of home, made by simmering small potatoes with their skins in soy sauce and sugar. It is popular for its savoury flavour, the potatoe's firm texture, as well as for its auspicious name.
